Landing a job at world acclaimed Tetsuya was one of the highlights of his career when he worked under a young and up and upcoming Martin Benn ex Sepia. Anton’s love of fusing culturally polarised cuisines was born from that experience where Tetsuya was on the forefront beautifully melding haute French fine dining with Japanese simplicity and executional perfectionism. It was the year 2001, Anton had moved on, and at 26 was head chef of a bustling Greek restaurant in inner city Sydney. Burned from manic hours and constant pressure Anton started questioning his path and decided to step away from traditional chef roles. Through a tip off from a friend Anton successfully applied for an Inflight chef role working in the first-class cabins of Middle Easter Airline Gulf Air. For the next 3 years Anton ate his way around the world getting paid to do so.
